On July 17, 2020, the National Nutrition Council Region IX (NNC IX), in partnership with the Nutritionist Dietitian Association of the Philippines-Zamboanga Peninsula Chapter (NDAP-ZamPen), conducted a cooking demonstration on complementary food and food pack recipes. One of the highlights during the cooking demonstration was the preparation on the recipe of Croquettas. The word “Croquettas” has been derived from the food named “Croquette”, a small cylinder of food consisting of a thick binder combined with a filling, which is breaded and deep-fried. The NDAP-ZamPen added a twist to the known Croquette to make it more nutritious and can be served to 12-23 months old babies onwards as their complementary food.
The main ingredients of Croquettas are corned beef and mashed potato. To make it easier for parents to cook nutritious foods, NDAP-ZamPen thought of corned beef as one of the main ingredients since corned beef is one of the food items included in the food packs being distributed to the households during this pandemic. Babies will surely love this recipe because it’s very soft in the inside and very crunchy outside.
Below is the recipe of Croquettas by NDAP-ZamPen:
Ingredients:
1 can corned beef
2 cups potato, cooked and mashed
1 tbsp butter
1 tbsp liquid milk
1 piece egg
½ cup bread crumbs
Flour
1 tsp. iodized salt
Pinch of pepper powder
Procedure:
1. Stir fry corned beef. Set aside
2. Combine mashed potato, butter, milk, iodized salt, and pepper powder
3. Form into 1 ½ inch ball. Press each center and fill with corned beef and cover with the mashed potato mixture.
4. Dredge in flour, dip in beaten egg, and roll in bread crumbs
5. Deep fry until golden brown. Serve hot.
This recipe is so easy to make! With its low cost ingredients, one can easily make this at home for your babies.
