It’s the start of another year. This means that Christmas festivities are sadly over, and now we need to get back to our normal day to day routine. One of the most given gifts during the holiday season is Ham and people frequently use this main ingredient in cooking the most famous Pineapple-glazed Ham. But what about if your family wants to try another recipe using ham? Moreover, what else can you do to reinvent the usual recipes you do for your leftover ham?
Ham Mashed Potato Cakes. This is one of the recipes that is widely famous for being easy and simple to cook but very delicious! It is a no-bake cake that is incredibly cheesy and can be made into a delicious snack or appetizer that even kids will love!
Aside from ham, potato is also used to whip this recipe. Potatoes are excellent source of many vitamins and minerals. One medium potato (173 grams), including the skin provides 4.3 grams of protein; 3.8 grams of fiber; 28% of the Reference Daily Intake (RDI) of Vitamin C; 27% of the RDI of Vitamin B6; 26% of the RDI of potassium and many more! It is also important to note that the skin of the potatoes contains a great amount of the vitamins and minerals. Thus, peeling potatoes can significantly reduce their nutritional content.

Servings: 18 cakes
Ingredients:
- 4 cups mashed potatoes
- 2 cups shredded Mozarella (or any preferred cheese)
- 1 egg
- ¼ cup Flour
- 2 Garlic Cloves, finely minced
- 4 slices of Ham, finely chopped
- ½ cup plain Bread Crumbs for coating
- 4-6 tablespoons Oil for shallow frying
- Mayonnaise for serving
Instructions:
- In a large bowl, mix together mashed potatoes, mozzarella, egg, flour, garlic, and ham until combined. The mixture should be thick and should hold its shape. If its too loose, add a tablespoon of a flour at a time (this will depend on the consistency of your mashed potatoes)
- Use an ice cream scoop to scoop out the mixture and form it into patties which are about 1/3 inches in thickness. Coat each cake evenly in a thin coating of breadcrumbs and set aside.
- Heat oil in a pan and fry the patties in a single layer on each side for 3-4 minutes till golden brown on both sides.
- Serve hot with mayonnaise.
